When its vocation for spring bottling was discovered, from which a bubble with fresh and fragrant characteristics was obtained, its spread witnessed a significant growth.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The boom occurred in 2009, when the Prosecco DOC denomination spread throughout nine provinces between Veneto and Friuli and, in the last ten years, the bubble phenomenon has had an exponential growth at the limit of inflation. But all this has nothing to do with the true historical vocation of the wine produced on the hills of Conegliano and Valdobbiadene, the ancient cradle of a vine intimately linked to the traditions of the territory, to the men and women who have cultivated it over the centuries.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Miotto family has been taking care of the Prosecco and Cartizze vineyards on the <strong><a href=\"https:\/\/www.bikeandtaste.com\/en\/food-and-wine\/col-vetoraz\/\">Col Vetoraz<\/a><\/strong> since 1838 and knows the evolutionary curve of Valdobbiadene&#8217;s most famous wine better than anyone else. This historic winery has witnessed the real evolution of Prosecco on the hills that are now part of the UNESCO Heritage Site, so we have asked them to share some details about the growth that this product has had in Italy, but above, all abroad.<\/span><\/p>\n<p><strong>Experimentation and evolution of Prosecco di Conegliano and Valdobbiadene<\/strong><br \/>\n<span style=\"font-weight: 400;\">At the beginning of the 1900s, modern technological knowledge led to the first experiments for the production of a natural fermentation sparkling wine conducted in large hermetically sealed containers \u2013 the Martinotti or Charmat method.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This was a fundamental turning point, because the working method contributed decisively to the preservation of the organoleptic characteristics of the fruit and was essential in the development of a certain expression of finesse and elegance.<\/span><\/p>\n<p><i><span style=\"font-weight: 400;\">&#8220;The production evolution that has characterized the hilly territory of Conegliano and Valdobbiadene&#8221;, says the Miotto family, &#8220;has been fundamental in the growth of the interest shown in national and international markets, conquered by the loveliness that only these wines can offer.&#8221;<\/span><\/i><\/p>\n<p><strong>The importance of the Unesco Heritage Hills terroirs<\/strong><b><br \/>\n<\/b>The true meaning of a terroir is the entirety of its land and climate but not only. It is also a question of customs and traditions. The terroir is the story of a territory and it is precisely this that has made generations fall in love, rooted in its eight hundred years of history.<\/p>\n<p><i><span style=\"font-weight: 400;\">&#8220;In recent times, demand for bubbles has had a balanced and steady growth <\/span><\/i><span style=\"font-weight: 400;\">path&#8221;, confirmed the family again. \u201c<\/span><i><span style=\"font-weight: 400;\">As far as Valdobbiadene DOCG is concerned, these ten years have also confirmed the trend.
